Two very different temperature readings

Hello everyone,
I was considering overclocking my CPU (not really made for that, but thought I'd try) and when I ran Intel's extreme tuners benchmark, I got 100 degrees from them and 39 degrees from speedfan. I know speedfan gives me accurate reading on my GPU because I matches up with afterburner and Precision, so what should I trust?

Woah, 100 degrees celsius? Do you have an aftermarket cooler? I wouldn't really trust Speedfan, get Hardware 64 (or 32, depending on OS).

What CPU do you have? "Throttling was yes" Do you mean that it started throttling? I wouldn't OC with the stock cooler.

When I say "throttling was yes, I mean that in Intel's tool, it told me I was thermal throttling. I know that overclocking on the stock cooler never goes far, but my CPU (Intel Xeon E3 1231 V3) is known to run cool. About the temperature readings from speedfan: my CPU temp seems to always be exactly 39. About Intel's readings: they really don't make sense, the temperatures change so quickly, and when the CPU is literally just showing that screen, temps range from 40-59. How would I check with Hardware 64?

try using other programs, core temp,real temp, cpuid. use one a t a time as opening multple programs can mess with readings. you should find a consistency using all of those program

Now I've downloaded GeekBench 4 and ran its benchmark. I got from speedfan, despite it's showing me 100% utilization at times, remained static at 39; Intel said that that max was 74 and told a similar story of utilization. I always though my CPU is supposed to run cool (from reviews online). I wanted to overclock it because user bench told me that my CPU was drastically under performing others of its kind, it used to say that for my GPU, but then I OCed it and almost set a record... I guess the CPU overclocking was not meant to be, lol. I don't get how Intel's tool can have temops jump so much though, on idle it will range from 40 to 50.
