It would definitely be enough- but if you are in process of choosing other computer parts, not just PSU and GPU- then I would recommend going for i3 6100 CPU instead. It will run games much, much faster.

Already own the PSU and CPU, can only afford the GPU and a Hyper 212 EVO when I get my next paycheck.
But I definitely am aiming for Intel CPU's in the future.

Plus, I'm running a GTX 750 1GB right now, the 1060 is definitely my top priority at the moment. :p
 
Yes, but don't use the CX500.

Corsair has a new series out - the CXM, which is 21394872337423978x better quality than the junk CX units. They come in 450 and 550W specs (450 is enough to run a 1060 and Intel chip). Newegg currently has a deal on the 550 for $39 with a $20 rebate card if you jump on it in the next couple of hours.

I also agree with the i3 recommendation. Despite being 2 core, it is also hyperthreaded, and performance is better than the FX-6300.
