1060 is more than sufficient for your needs then, if you only game lightly on one monitor and code on both. No need to spend extra for 1070 if you don't plan to play AAA title games.
If you're only using one monitor to game you can achieve upwards of 120 fps on games like overwatch. I am also not 100% sure what youre trying to play.

How does it works when I play GTA V on a 1080p monitor, and on another 720p monitor watching YouTube or something? Just simple internet stuff. Will that work, and if I play on high settings how would the FPS be?
