What do I upgrade first? CPU or GPU?

Currently, I have an FX 8350 clocked at 4 GHz paired with a PowerColor R9 290.

I am looking to upgrade over the holidays coming up and I don't want to do an entire system upgrade all at once, but rather in increments.

So, I was wondering, should I upgrade my CPU/MOBO/RAM first or my GPU?

I am looking to upgrade to the Skylake or KabyLake i7 6700k / i7 7700k respectively.

I am looking to upgrade my GPU to a GTX 1070, probably the SC GAMING by EVGA

So which should I do first?

I would upgrade the cpu first. The i5 7600k will probably be a very strong cpu and would be fine with a 1070, though in some games like battlefield 1 the i7 7700k will give more performance since the game is very cpu heavy.

I'd also like to point out, I just game on my PC, is the i7 overkill? I know in most situations, but how much of a performance difference will i get out of the i5 6600k vs i7 6700k? Would it be worth it to get the 6700k if it would last longer or no?

Or should I wait for the i5 7600k /i7 7700k

For gaming the i7 range has little advantage of the i5's. Very few games utilise more than 2 cores. Get the i5 and put the money you save towards a new GPU in the future.
