You forgot one important element in naming your specs regarding a GPU upgrade...

What resolution/refresh rate is the monitor you're currently using? This will help you better in making a decision, especially if you're budgeting and what rez you're at.

I think your CPU is going to limit you for sure. I have a 1080 and I was limited by my i7 3770K.

I upgraded to an i7 6700K and Asus ROG Maximus VIII Formula and now I rarely drop below 60fps at 1440p on Very-high/Ultra settings on everything.

If you're upgrading to a 1440p (or higher) rez monitor, then go with the GTX 1080 as OCD suggested as it has more power than the 1070 or 1060. However, you're going to be CPU-bound/bottle-necked with certain titles. So, keep that in mind.

given that i'll upgrade to the suggested monitor, will 1060 or 1070 cpu bottle-neck my system as well? i mostly play dota 2 and starcraft 2. some assasin's creed, mortal combat, etc. but i dont play fps games.

If that's all you're doing get a 1050 you won't need more than that, my 1080 runs LoL on max settings at 1440p with 500fps. A 1050 would be more than enough to max out either of those games. But beware Blizzard's optimization sucks. 10 series cards are having a ton of problems with Blizzard games.
