Would it be ideal to have sli 1080s, with a HB bridge/water cooled/ OC'd, and a center 1440p 60hz monitor and 2 1080p 60hz monitors, or would it be better to have 3 1080p 144hz monitors, or just stick with a basic triple 1080p 60hz setup? Although the 1080 is a beast of a card, I don't think it's anywhere near good enough to run a 4k with 2 1080p's.

Both of those two initial monitor options are either way underpowered for dual 1080s, or just silly.
With multi-monitor setups, you always want an IPS panel for the secondary monitor due to viewing angles.
I recommend going 4k with that setup, or 1440p 144hz with a secondary monitor that can be 1080p if you want.
A single 1080 comes close to maxing stuff out at 60fps, SLI will hit that mark no problem. Just remember AA isn't as crucial at 4k, 2x or 4x is fine.

I would suggest the 3 X 1080p on portrait that way the middle of the screen for shooter games aren't on the bezel. I wouldn't suggest mixing resolutions as that can be a headache.

Not necessarily....
1440p on 27" just has a slightly higher PPI than 1080p on 24", don't know why it would be a headache in the first place, perfectly fine imo.
Latency due to daisy chaining can also be an issue sometimes, in addition to inputs of the monitor and adapters.
Cost also works out to be very high, similar to a good 4k monitor anyway.
I recommend this, 4k is a world away from 3x 1080p panels.

You get everything from text size differances, to mouse moving range being out of wacke, and getting use to things look freakishly large on the 1080 screens compared to the 1440p. Mouse moving to center something only on the 1440 screen becomes odd when moving the center to something you see on the 1080p monitors on either side because the center screen shows more area per inch than the than the outer screens. I had the setup with 2 720p and a single 1080p and it was a headache for these reasons.

I use a 1440p 27" screen and a 4k screen sometimes and I can tell you from personal experience it is perfectly fine.
This is a very exaggerated issue.
You can just change your DPI/sensitivity to 1.6x to accommodate the change in resolution and everything is set.
You can change icon size, although I find the standard one to be fine, the extra real estate is VERY helpful.
720p to 1080p will cause a very drastic change in terms of visuals and can cause headaches, I agree with that, but above 1080p the changes are more subtle, and the image simply becomes clearer and smoother.

A single 1080 can run 4k? I thought from benchmarks, we wouldn't be at decent frame rates at 4k until the gtx 1180 or 1280. I guess benchmarks don't say much about actual gaming although. How would triple 4k monitors be if I just used the center monitor for gaming most of the time, and occasionally run all three in surround to play a game with the settings turned down, like forza, or some other racing game?

I've seen that the titan x(p) can run games at 4k, but i didn't think it was that great in newer games. It annoys me that there's talk of the 1080 Ti in January after I just got a good gtx 1080 in that doesn't have killer coil whine . Supposedly it'll be a titan for cheap, but that would be a kick in the back of the knee to sales.

Sorry. I don't know why I said specifcally single. With dual 1080s and mainly gaming on the center 4K monitor and occasionally using all three at extremely low settings just for kicks.

Yup that will work pretty good. Games like WoW and such could work on 3.

Oh. I thought people were saying early 2017. It will probably be overpriced until it is readily available to the masses and there's competition for it that drives prices down anyways. Thanks for your time. I believe you have helped me before. I'll probably test the waters and get that monitor you recommended when the time comes.
