I have a 1070 now, and I was wondering if it were safe to SLI a 1080 with it. I've read that SLI with card's that have different memory amounts would lead to problems, but the 1070 and 1080 both have 8 GB. although one is the 1070 is DDR5 and the 1080 is DDR5X, and i'm not sure if that would complicate things. apart from that the cards seem to be pretty similar, but I don't have SLI experience so I am not 100% sure about things like these.

Even if it worked, the best-case performance scaling would typically be approximately twice the speed of the slowest GPU, usually worse in real-world scenarios.

It will work with games that support explicit multiple adapters in DX12/Vulkan, but mileage will vary depending on how well the games you want to play implement that.
