After the huge headache of trying to install Win7 via USB, I found a guide online to manually create the boot partition (with the installation files) on the disk it is installing to (neosmart.net, I can link the specific guide if necessary). This solution worked for me and Windows is now installed and working.
However, after booting up, my machine gives me the option to load Windows 7 or load Windows setup.
I've removed all of the files associated with the setup (that I know of.)
For reference, there is only 2 partitions on the drive (the system reserved partition and the main/active partition, where I moved the contents of the install USB to and mounted it from.)
I'm just looking to get rid of the traces of the Win7 installer or, at the very least, keep the machine from prompting me if I want to choose between the two. Not a super huge deal, just an annoyance!
