I recently bought a new cpu, i5 3450, and the tempeture rises at 100 ºc when playing and normally it is at 80 ºc, what is the best opcion to reduce temperature?
Clean old thermal paste, apply new compound and re-install the CPU Cooler.
Good chance that the heatsink is not installed correctly if you did not have this issue with your old CPU.
If this does not work, I agree with the above post, get a new CPU cooler.
Another thought, isn't the set point for a high temp shutdown of the system usually 90C CPU temperature? Maybe OP should try a different monitoring software to verify these temperature readings?
An idle temperature of 80C is far, far too high. Even with a stock cooler, the temperature should not be that high. My recommendation is to get an aftermarket CPU cooler, and ensure it is installed correctly with the right amount of thermal paste.

No, the limit is 105 degrees and at 104 degrees is starts to throtle (reduces frequency to cool down) if the throtle doesnt bring the temps down then it shuts down.
it's more likely that the push pins are not fully engaged. Lack of thermal paste might lead to +10 - +20 above an ideal idle temp, but 80C would only occur with poor contact pressure.
