I am obviously not the type to go all out, I don't hardcore game at max settings. I just want something better than a console. With that in mind, how do you folks feel this setup will hold up over the next couple years?

Not a good idea, get a current chipset and CPU, for a mid-range system Intel i5-6500 and a $80 or so 1151 socket motherboard.
If you want to maximize your budget you can go to a 1150 socket and CPU and re-use your RAM.

The Xeon is better than the CPU you have now, but it's a CPU from 2012 and motherboard from about the same era.
