Migrating from small M.2 2280 drive to large one

My Dell Precision M4600 laptop died suddenly, and I got a "new" laptop from my company, a Latitude E5570 with an M.2 2280 256GB SATA ssd (running Windows 10.) I had hoped to slide my almost full 1TB SATA SSD (2.5") into the Latitude as a storage drive, and keep the 256GB M.2 as a boot drive, but when the Latitude arrived, it has the larger battery, that takes up the HD slot. So, I ordered a 1TB M.2 SATA SSD (a Sandisk X400.) My question is what's the best way for me to migrate from one M.2 to the other? I've already set up the new PC, and it has all the Windows updates, Office 2016, etc, so I'd like to transfer the OS and apps to the new drive when it arrives, but I can't figure out a way to do it directly. I have an Orico SATA 3.0 dock, with two slots, so I could have probably figured out how to clone a 2.5 SSD, but an M.2?

I have a USB drive that I could probably use to (slowly) create an image of a 256GB drive, but it wouldn't work to create a 1TB image! What software and process should I use so I don't end up in the middle of the process with an un-bootable PC or a 1TB drive with only 256GB capacity?

OK, looks like I found another thread that said to get an adapter, I ordered two M.2 to SATA3 enclosures, we'll see if they do the job. That way I can use my dock. Maybe there's still a trick to it, but I should be able to find that information.
