Adding a i5 and a ssd for around $40 more makes it much better. You dont need the cpu cooler. The stock cooler is plenty.

They will work but their no reason to get the 212 cooler for that processor or spend the extra on the FTW video card that power supply is also rather low quality.
10 bucks lower and get you a SSD for the OS and programs.

Some of the parts you have both agreed on, which is great, but I am having a hard time choosing between the differences on both your lists. Would they work the same, or is one superior?

There is nothing more superior or inferior in there for you to determine in real time, except ofcourse the i5.

2. what monitor do i use, like hdmi, vga and what not.

For cables you need to check your hardwares. Most should come shipped in as included. But sometimes extra cables might be required. Specially if you are adding custom fans and extra storage.
VGA monitors are becoming obsolete these days and most of these cards come with hdmi/dvi ports.
You can do dual monitor or even more, if you want.
