I'm thinking about building a new mini-pc, and I wanted to ask....is it smarter to buy 2 dual ti 1050 or 1 sli 1060? which of the two options will perform better? tnx in advance
Yup. Sadly they removed SLI from everything below the GTX 1070. You know, I wonder if enough work is put into DX12 if they could get the explicit multi-adapter mode to work in a 'bridgeless SLI' (much like AMD's crossfire which is bridgeless). At that point, you could theoretically have a tri-1050 setup - but it would only be on a game by game basis.

You can indeed. AotS you can run dual 1060 and get better performance than the 1080. But not much support yet.
2x Gtx 1060 in SLI have the same performance and same price like one Gtx 1080. But think fair: kw consumption, sli bridge, heater, psu more bigger than 600 wats etc ... and btw Gtx 1060 have no support for SLI ... 1070, 1080 have.
