Hey there.
The SATA mode (that includes AHCI as well) is changed in your BIOS/UEFI settings. However, since you've already installed your OS if you're currently using IDE mode, you'll need to change the registry for the SATA mode before you change the BIOS/UEFI settings. Here's how to do that: http://www.tomshardware.co.uk/answers/id-2347183/change-ide-ahci-reinstall-windows.html.
TRIM is basically an OS feature, which is not enabled or disabled by the software you're referring to. For Windows 7, 8 and 8.1 you should enable it yourself. For Windows 10 it should be enabled by default. Here are some useful tips for new SSD users (including enabling TRIM): https://www.maketecheasier.com/12-things-you-must-do-when-running-a-solid-state-drive-in-windows-7/. Don't worry that it says Win 7, those tips are still viable for the newer versions as well.
Hope that helps. Please let me know if you have any questions.
