If you're willing to lower down the settings to play at 1080p, then all three will last you several years. Hell, my old laptop's GTX 670MX can still play games in 1080p, at medium-high (but not at 60 FPS, of course).

Now, if you mean 1080p Ultra then the previous answer is somewhat accurate. But if you mean, 1080p Ultra at 60 FPS then I have a more pessimistic outlook. Here is my opinion, based on previous experience (assume the year starts on January 1, 2017 and ends on December 31, 2017):

GTX 1060: 1-1.5...

GTX 1060: 1-1.5 years.

GTX 1070: 1-3 years

GTX 1080: 2-3.5 years.

No way even a GTX 1080 will hit 1080p Ultra @60 FPS in 2021. It'll be lucky to reach that in late 2019 through 2020. Now, 1080p at high-ultra at somewhat below 60, sure. At high or medium-high at 60 or just above, more reasonable.

In my opinion, if you understand that you will likely need to upgrade in about 2.5-3 years, and are okay with staying at 1080p Ultra @ 45-55 FPS, or 1080p high @ 60 FPS, then I would suggest the GTX 1070 as a compromise card. But if not then obviously spend a few hundred more for the 1080. I think the 1080 is not worth the extra money if you plan to upgrade after skipping one generation, but if you plan to skip two, or three (why?), then it's actually a necessity. Or you could wait for the 1080 Ti (more expensive though).
