Is it possible to use 3/4 RAM Slots without breaking Dual Channel?

My PC has two sticks of 4GB DDR3 1600 Corsair RAM currently, in dual channel orientation. I want to upgrade to 16 GB for a multitude of reasons, but my CPU cooler is covering on ofc the ram slots on my MSI 970 Gaming MOBO. If I were to stick a single 8GB DDR3 1600 Corsair stick between them, would this cause any problems? What would my best option be?

Depends. If you want the speed of dual-channel operation, use two sticks from a matched pair. If you just want 16 GB, stick an 8 GB single in there. But at least some of, and possibly all of, your memory won't operate in dual-channel mode.
