playing @ 2k (2560x1440) @ 144hz on my 278q, getting huge fps drops in a lot of areas, espescially the dlc content, frames can drop down to 35-45, usually hovers around 55. i have gsync on but it doesnt really help when im getting such low fps

any tips on troubleshooting whats going on or is a single gtx 1080 just not enough for fallout 4?

im running it without mods, but i have all the graphics settings on max. turned off AA just to test, still get the fps drops.

Maybe set up afterburner to run in the background and when you have a lag spike check to see if anything abnormal is going on. You could be thermal throttling when the card ramps up. Also check to see what speed your card is running at, maybe theres an issue with slow clock speeds. Also what wattage is your PSU, maybe you're just not getting enough power to the card. Because from all the tests I've seen a 1080 should be able to run fallout no problem.
