The use of jumbo packets?

Everything on my LAN network is gigabit equipment. However i'm getting speeds on file transfers about 105 MB/s. Why is this?

Also I would like to add a Physical firewall / Filtering system on my connection. Any recommendations?

Solution
105MB/s is about as good as you will get with the overhead of the (assuming Windows) CIFS file system. You might get a couple MB/s higher with jumbos but it usually isn't worth it.
Mostly this is going to be are you really sure you want to do this just to get a small increase in the speed. In general you get about 10% overhead because of the headers which is pretty much what you are seeing.

The main problem with jumbo frames is all the equipment must support it. This works very well in say a storage network or a network between servers. The big thing that does not support it is the internet. Although you can partially make it work it causes issue if you have your internet connection on the same network.

So if you want to run 2 network in your house it might give you a small increase. You might get the overhead down to 3-5%. I guess it is up to you if it is worth the effort and cost to do this.
