Please critique my build. I am looking to SLI two GTX 1080 Xtreme (I already own one at this time) in a mid-tower case. I do not have any real budget in mind, but I would be willing to cut costs on any components (CPU, mobo, etc.) as I will only be using this system for gaming. I do want to future proof this sytem to some extent as I would like the case, mobo, and CPU to remain untouched for some time to come.

I was worried about lane use and this was my reasoning for the choice of CPU, but I admittedly do not fully understand "lanes."

I currently play on three 27" 1080p monitors, but I will be making the move to the x34 UltraWide (1440p @ 100hz) and I would like to push 100+ frames whenever possible.

I dont think you would, its still going to chew through games at 1440p and be able to give you good FPS in 4k if you ever decide to go upto that resolution. Plus you're saving $500 by changing it. It will be an absolute monster of a system.

It seems you have the money, so I would advise 1) Waiting for the 1080 Ti to come out in January or if you don't want to wait, 2) Buying a Titan X Pascal instead of the 2 1080s. Two cards is not a smooth solution, it brings in more issues than it's worth. Other than that, very decent build, it'll run like a champion.

If you are only gaming on the system and not planning on rendering etc. then i would say cut back to an i7 6700k as all the extra power will never be used unless you do intense video editing/rendering. You could also save money by looking at other RAM such as G-Skill Ripjaws/HyperX Fury sticks which are reliable modules but for a lot cheaper than the Dominators. Also rather than SLI 1080's you would be better off waiting for the 1080Ti/Pascal Titan as SLI is not very well supported in modern games.

Other than that the build will chew through any modern game you throw at it and should last you for a good few years.
