Decent modular PSUs:

Corsair RMx / RMi
EVGA SUPERNOVA G2 / GS / P2
Super Flower Leadex / Golden King(think that was modular at least)
XFX XTR
Seasonic Prime / SnowSilent, when on a budget: G

These are my usual go-to units for fully modular quality Power supplies.
Will cost you 70-100quid though.

As for the Pro Gaming vs. The UD3 - they're basically identical in terms of specs.
The UD3 has 12 Power phases (2 more than the Pro Gaming) which might add minor stability when oc but only Supports RAM up to 3200Mhz (unlike the 3800 of the Asus)

I'd go with whatever you get cheaper.
do you have a GPU already?

with the 6700k there's no need for a liquid cooler since the CPU remains fairly cool

I suggest Corsair Vengeance LPX RAM or Kingston Hyper as those RAM sticks do not interfere with CPU coolers (unlike for example Ripjaws V)

for the mainboard I suggest picking the cheapest out of:
Gigabyte Z170 Gaming 3
Gigabyte Z170 Gaming K3
Gigabyte Z170 UD3 (slightly better for OC)
ASUS Z170-A
Asus Z170 Pro Gaming (slightly better for OC)

I think I'm gonna go with the asus z170 pro gaming and the corsair vengeance hopefully those prices will go down a bit for Black Friday

Depends a lot on your chip too, how lucky you get with the asic quality really affects your overclock. I'm on a hyper 212 evo on my main rig and got 4.5 GHz at 1.30V out of an i5 4670k, which is about the maximum voltage (1.25V if your IHS TIM isn't that great) you should be looking at on this cooler if you have great airflow. When I build my friend's PC with a 3570k I could only get 4.3 GHz out of roughly the same voltage since his chip kinda sucks. I'd expect anywhere between 4.3 and 4.8 depending on the quality of your chip and IHS TIM with a 6700k.

Yeah my goal oc is 4.5 and I have good airflow I don't keep my side panel on but now that I'm upgrading to 6700k I'll put it on the only reason I kept it off was cause of my 8350. I'm stoked to be getting solid frames in my games and have pretty much over 60 Fps and minimal fps drops in most of my games this will definitely help with my freesync panel having minimal drops my freesync range is 40-75hz
