I am confused between i7 6700k which uses z170 chipset and i7 6800k which uses x99 chipset. I know that going with i7 6800k and x99 would cost me more than i7 6700k but I am willing to pay more if it is worth it. I am planning to use this pc mainly for gaming. It is like 70% gaming and 30% other stuff. I am planning to get a GTX 1080 for this system. Thank you for your opinions.

The i7 6700k(6th gen) is a bit faster IPC than i7 6800k(5th Gen). Gaming also will be a bit faster at stock, unless you plan on OCing. Both would be similar in real-world gaming at that point. Chipset features are basically the same, unless you start to add multiple GPUs., M.2 SSDs due to PCI-E differences in design for each chipset. Z170 CPUs can generally run higher frequency RAM as well, but again very minimal real-world gain outside of benchmarks. If you use software that benefits from more than 4 cores, X99 may suit you better.
