So question is when i change motherboard, and i connect hard drives with files inside of them on windows 10, do i need to format them? because i have like 1tb or 2tb of files
No you can browse them as data drives by connecting after you install your new OS. Dont connect them before you install though or your system may try to boot from them.

I know and if connect them, to mobo, windows might spread around, so what i will do connect only ssd install windows and then connect drives, so windows will be in ssd only
