I am choosing a new cpu, and the only cpus im considering is the i7 and the i5. I do editing on sony vegas 12 for school projects, and I play cpu intensive games a lot such as gta 5 on ultra 1440p. Also im going to do some photoshop, too. So, should I get the i7, or should I get the i5?

Since you do a lot of editing i7 will be much better choice. I5 is good for gaming but for editing you really want to get i7.
If you have budget to get i7 go for it dont even think about i5.

A modern i5, especially the unlocked one, will be a very powerful CPU. It will keep up for everything you need it for. That being said, if you are doing some big videos in Sony Vegas the 8 threads of the i7 may constitute a real improvement over the i7.

You could always grab the i5 and a decent cooler and overclock it to 4.5GHz :-D

If you need performance strictly for gaming, don't bother with an i7.
I personally have an i5 4690K and it's enough for both, editing and gaming.
But if you do a lot of work and editing and more than 50% of your time on the PC is working rather than gaming, go for an i7.
They are a lot better when it comes to multithreading and demanding apps and operations like rendering etc.
