Is it possible to use any OS on a custom build PC without worrying for drivers?

Without having to worry about having driver incompatibilities. E.g using old Win 7

MSI B150 PC Mate ATX LGA1151 Motherboard

As long as you aren't using really old parts, no. There should be no issues, but if you post your motherboard that should tell us enough to assure you that it'll work.

The exception being some wireless cards, sound cards, webcams, and stuff of that sort.
 
Well, not all drivers will be able to download. IF you have the drivers, I have put them on an USB stick and isntall them that way. I know for Gigabyte motherboards, the LAN driver is not installed, you have to physcially installed it. Some drivers (like display) may be generic as well.

Windows 7 or 10 is probably your best bet.
