SLI two different brands of GTX 1080

Brand doesn't matter, but if you want to get 2 different cards, make sure you get 2 SLI "ribbon" bridges as the newer "HB" bridges most likely won't match up. I'd recommend getting 120mm ones as I don't know how far apart your cards will be spaced.

Another thing to note is that your newer card will be slowed down to match the speed of your older slower one. It's not a huge performance loss, probably pretty marginal, but still something to take into account.
