GTX 1080 weird behaviour

So I have got a G1 Gaming GTX 1080 from Gigabyte and since today it's been doing some weird stuff.

When I play ETS2 for example, the GPU uses a lot more resources in the menu than in the actual game. In the menu it reaches around 70C, while in the game it doesn't pass 55C (also abnormally low power consumption - Corsair Link), also keeping my FPS lower than before (now around 60, then around 120). It's true that I have disabled Vertical Sync so in the menu it's normal to produce a lot more FPS, hence the higher temps, but comparing it to the old numbers is actually what I don't like.
Also, in GTAV i used to have 100+ FPS, now with the same settings and everything, in some cases I manage to reach 55FPS. That, for a GTX 1080 on 1080p is absolutely disgusting.
I just hope it's not a hardware problem, I tried reinstalling Windows, unplugging my 2nd monitor, changing settings in XTREME GAMING ENGINE and rollbacking drivers (please don't mention working around NVIDIA Control Panel settings), but nothing works. The problem has appeared just today. I'd love to hear if you have any ideas of what might be going wrong.
To be noted, my idle temps started going high like 2 weeks ago, I'm idling at about 47C and the fans at 760RPM.
And no, there is no way it's being bottlenecked:
CPU: i7 6700K @ stock - no throttling
GPU: Gigabyte G1 Gaming GTX 1080
RAM: 16GB HyperX Fury Black 2133MHz
MOBO: Asus Maximus VIII Hero
PSU: Corsair RM750i - all temp/rpm monitoring done via Corsair Link, fps via Fraps.

Hmmm... if also been getting tha since today. Maybe a driver problem?

I have rollbacked 2 versions. I seriously do hope it is a driver problem.
