If you are not planing on upgrading monitor than 1060 is more than enough for 1080p even if your monitor is 144Hz. GTX 1070 and GTX 1080 are for higher resolutions and monitors that run at 144 fps.

Also if you want to save money go with 6700 non K if you are not planing to overclock, you also save money on motherboard, you can get one with h170 or h110 chipset instead of z170 chipset.
Well it depends what you are plan on doing. Also, do you have a budget? For CPU, I believe you mean i7-6700K with the Z170 motherboard. The GTX 1080 is powerful enough to push out 4K gaming. You are also going to need DDR4 RAM. I recommend G SKill, but I see a lot of builds with Corsair, it's really up to you.

What monitor do you have? GTX 1080 is overkill if you are using 1080p monitor. Also i5 6500K doesn't exist, there is 6500 without K or 6600K, if you want to save money go with non K version and buy a cheaper h110 / b150 / h170 motherboard instead of z170 if you don't use the extra features. If i was in your place i would buy i7 6700 with a h110 motherboard and GTX 1070.
