Safe temps for overclocking a 6850k? and gtx 1080?

Solution

You do have some headroom and maybe you can achieve 4.4GHz starting at 1.25V on the core. If its not stable then raise the core voltage up .01V at a time till stable. Do not go above 1.38V.
Don't bump the frequency up in one hit, go from base clock 3.6GHz to 4.0Ghz to 4.2GHz then try 4.4GHz. Stress Test at each phase and save profiles if you can at each stage.
The OC you can achieve will depend on the Quality of your chip and your core temperature. So monitor...

The highest ive gotten on my CPU that ive seen was 56C under heavy load after recently replacing thermal paste, What would you recommend a good starting overclock?

If you want to test your system using a Stress Tester then download HWMonitor and AIDA64. Put them on your desktop together and you will have all you require. In AIDA64 you can go to Tools and select the various tests for CPU, FPU and other sub systems. In HWMonitor you will be able to check all rail voltages and core temps when under load.

Try 4Ghz @ 1.26v and with any luck it should stay under 65c.
