Yeah it should be fine. Depends what you use to OC your GPU, but there should be an option to save the profile. Save it to an external device/cloud then restore on new system.
A GPU overclock is software based so all you need to do is save your profile then transfer it to the new system. Whether it'll still be a stable OC is another matter, and will depend on what you are switching from and to.
