6850k overclocked to 3.9 MHZ

I'm getting 57C max under 3DMark demo, and an idle of 37C average. Would it be safe to go to 4.0 MHZ and test it or should i try another benchmark?

You shouldn't really worry about the temperatures on the GPU, unless you want to keep your system silent, just set the fans at a specific usage at all times or create an aggresive fan curve.

I tend to aim for 60c, but I'm sure you could go for 70-80c.

What I found out from OCing my 970, is that it doesn't really affect temperatures too much. But I have the fan speeds set on 30% at all times, I used to have it on 50-60%
I would not stress with prime95 or IBT; they use specialized instructions.
Use OCCT or an app based stress test for more realistic results.
Temperatures are not your restriction. Vcore will limit your oc.
As of 10/11/16 here are the odds of I7-6850K
overclocking at a reasonable vcore around 1.35v.

You can use Prime95, just use version 26.6 or below for more accurate results, people do prefer other software such as OCCT, which I do admit is really useful, never used Prime95 but I just stick to OCCT or the Intel one.

The main thing is temperatures. Most people have a target to aim for and go no higher, for example, mine is around 70c, some people aim for 80c, some 75 and so on. Decide what temperature makes you uncomfortable, just make sure it doesnt go above 80c altogether, as damage over long periods will be done at 85-90 to 104c, but I doubt you'll go that high.

I would bump your clock speeds up to 4GHz, then try 4.1, 4.2, all until you hit the temperature that makes you feel uncomfortable, you should be able to get a good 200, maybe 300MHz out still before you reach 70c.

Edit: Note - I didn't mention VCore due to the fact @Geofelt went over it. Use the information given by Geo to your advantage too, as the information there says that 83% of 6850K's should reach 4.3GHz.

I'm running OCCT right now and after 12 minutes of testing so far the highest temp is on my core 4 at 74C max in a 1 hour test. It's at 3.9 MHZ currently, Is this as high as it should go? or is core 4 not what i should be looking at.

You're doing the correct thing, and looking at the cores rather than the package.

What do you use this CPU for may I ask? As the best benchmarks are testing it on what you'll use the CPU for.

Mainly just gaming at the moment, I wouldn't mind going higher then 3.9 if possible but what would you recommend with 74C max so far?

I personally don't like temperatures over 70c, as I said above, but you can go up to 80 if you wish, and try pumping 4GHz out of it.

Don't forget that your temperatures won't be as high while gaming, so you could always play your favourite game and see what temperatures you get then.

Final question, What would you recommend msi gtx 1080 X temperature to max at, I plan to overclock this a little next.
