I already bought the GTX 1060 3GB with a i5-6500 but I am feeling like I made the wrong choice and feel like returning it and getting the 6GB version for £40/50 more. What should I do?

It would be a dick move to return a fully functioning GPU, the company that sells can't just resell the one you used for the full price + the shipping costs, it's very unpolite to do it, it was your mistake to not decide the right way, just stay with the 3GB for another year and buy better cards that will come out in 1 year, 3GB is still more than enough for most today games.

Well, if that's the case than you can return it, just know that most games don't need more then 3GB at ultra settings. Getting 6GB is just more future proof, but with the good increases of performance of GPU's every year, you should just buy keep the 3GB and buy a new one in 1 year, you can always sell it for decent money after 1 year.

I'm fairly sure your covered by your consumer rights especially if you bought it online which covers you under the distance selling act, I think you have 30 days regardless of if you used it. This is just one of the things retailers have to deal with. If you buy something and its not met your expectations why should you be penalised, unless its a consumable you get the option to change your mind. You may have to research your rights as some retailers don't stick to consumer rights unless you point out they are in breach of this.

One of the reasons things cost more in the UK is retailers factoring in covering consumer rights. Yes the biggie is VAT but they should make sure their margins cover the costs of giving customers what they are legally entitled too.

Personally Id get the 6gb. Some games are already using 3gb at 1080p so 3gb gives no headroom for the future. The 6gb is also slightly faster sure to extra cuda cores.
