Will a Core i7 7700K bottleneck these graphics cards in SLI?

An i5-6600K wouldn't even bottleneck that setup, an i7-7700K would handle it with no problem.
The word bottleneck is thrown around too much without any knowledge of what it really means.

I'm assuming you mean the unlocked edition? No, not really necessary unless you like the idea of overclocking.
As said above, there won't be a bottleneck. Not unless you're running dual GTX 1080s at reduced settings/resolution to try and get insane FPS, or some other edge case like that.
