Replacing my SSD Tomorrow, If I remove my Current SSD + Hard Drive, If I plug them back in, Will everything run as it did?

So I have an MSI GX60 Gaming Laptop, That runs a AMD A10 4600M And Radeon HD 7970M Graphics. When I first installed the Drivers for my GPU, They proved to be a pain in the ass to install and ended up taking me the best part of 2 days to get them working, Even now, They seem bugged as I can't even update them without errors.

I'm buying a new SSD Tomorrow, As my current SSD is so slow, But Im extremely worried about having to re-install the Drivers for my GPU Again. So I'm wondering, If I take out my current SSD + HDD, Install the new SSD, Attempt to install my GPU Drivers again, And if that fails, Hopefully just throw back in my old SSD + HDD, Will my PC Work as it did before I installed the new SSD?

Yes. All the information is stored on the original setup and won't change if you remove them.

Dont suppose you'd know if it's possible to somehow.... Transfer my current Driver setup to my new SSD through, Say a USB or Disk?

Drivers are installed in Windows so you can't just transfer drivers, they need to be installed again if you install windows on new drive.
What you can do is to transfer your windows drive to new SSD if you want to keep everything as it was. You can either clone drive or make an image of it and than install that image on new SSD.
