Well, cores or clock? Kind of the deciding factor. How many VMs?
Obviously the higher clocks of the 6800k are going to be better for games, and if you overclock, that much better.
The right video editor could get some real work done with 28 threads to play with. And you could have a lot of simultaneous VMs running on a 14 core box.

The Xeon will definitely take over everything except gaming, where it MIGHT perform badly depending on the game. I have 2x E5-2670's and they run most games within 10% of the equivalent 6700k setup, but there are some games, like Rust, which is only dual threaded, where it's so bad that you can't even play.
