I need help picking the right GPU, Motherboard, and any changes caused by them.

So I have been planning on building a computer for about two years and saving money and spending it and whatever but after searching and finding some parts that I like and have a nice price I'm having second thoughts.

Above is the link to my current build. I will have an LG 27MP48HQ 27" which is 60Hz and 5ms response time (if that makes a difference).
I will be editing youtube videos and music and playing games such as Smite and Battlefield. I have a cat so I will need big fans and the unit will sit on my desk but I need to know about the GPU, should I keep the 1060 or go up to the 1070? I'd prefer not to spend even more money but if it can't be helped then oh well. Also, I have looked at the Motherboard and I'm just not sure? Is ASRock reliable or is there a better alternative?
Also, do I need the 750 Watt power supply? The wattage of the system is about 296 so I would not need the 750 watt, is that right?

Your options are limited, that is why I don't recommend shopping from one site. Shopping around gets you a better build, for your money. Chose a Z170, only because of price, here.

Thanks Hades, but any recommendations for the motherboard? Or for the PSU? Also what is your opinion on the GPU?

Hades, I did a little bit of research and the price was why I ended up on the Z170 board so thanks for that and the rest of this, I will have a look and get another opinion because it can't hurt and get back to you.
