So everything works fine if XCHI is set to auto, but I notice if I set it to enabled, save the settings and reboot back into the UEFI bios that my mouse and keyboard do not work unless I unplug them and plug them back in.

Any ideas if this is normal behavior? I would think they should work in the bios with XCHI enabled at least. They are plugged into the normal usb 2.0 ports if that helps.

So I've tried plugging the mouse and keyboard into pretty much every usb slot with xhci enabled and they do not register in the bios. Xhci on auto and smart auto works... Any ideas? Should I return the board?
