I agree PCPer is a good place to check out other builds for ideas however you don't need a 800W PSU and for the budget I would pass on a SSD for now as it really doesn't affect gaming or streaming and the money can be put towards a better GPU.

a good gold/platinum rated psu doesnt need to be 800w, unless you plan on multi-gpu, which now gets less support (games/drivers).
650w-750w is enough.

i5/i7 (depending on socket/new/used) should do, but i would wait until zen gets released next month.
will be "faster" and cheaper than intel, so no reason to waste money now.

yes, and looks promising.
even if your not interested in the 8C/16T one (rivals 6900K), they will release 4/8 and 6C/12T cpus as well.

knowing amd it will be at/below intels price for 3/5/7, but should be faster, more efficient,
and comes with a unified chipset that amd will use for all cpu/apu's, so no need for a new board after a year...
