Seems like a good build to me. In my experience a 1060 should serve you well for playing and encoding. Here is a guide I found back from the summer which has some examples. Just a tip: make sure that you have decent internet if you are going to stream. Depending on your quality, it can get really intensive.

It is good build for gaming at medium settings like ac unity,syndicate,battlefield 4 etc at 1080p.If you want to play with max settings at 1080p you need to add a gtx 1080 not 1060.
