New CPU, MOBO, RAM and Windows 10

I'm looking to upgrade my workstation.

I currently have a GTX 1080 plugged to a Gsync 1440p Dell screen but my CPU needs upgrading as it can not manage all the stuff i'm doing. I do a ton of video and image editing but also do quite a bit of demanding gaming, CPU can not handle BF1 for example.

I was thinking for the CPU either of these:
i7 6700K
i7 6800K
i7 6850K

Then hook one of the Corsairs Hydro water coolers to it and then stick some 4x4GB 2666MHz DDR4 RAM into the motherboard and i was thinking the X99-A II motherboard. I currently have a 550W EVGA PSU, may buy a 850W.

What is everyone's input on this?

Overclock as you please and add a second GTX 1080 in SLI when / if you need more graphics muscle. Be sure to update the BIOS on any X99 board you go with when pairing it with the newer Broadwell-E processors.

If you meant 6 cores and 12 threads, 6800k has 6cores|12threads. Thread = logical core.

If you meant 6 physical cores vs 12 physical cores (not threads), yes, but depends on what you're doing. Gaming - no difference. 4K and higher resolution video rendering - huge difference. And, of course the price, 6core 6800k is about 400$, and 12 core may be even more than 1000-1500$ mark. If that is what you asked for (?)
