Trying to figure out if I should just use this extra gtx 580 that is just sitting in storage, or if I should just get like a used 970 or a gtx 1050 ti. The cpu that it has is a FX 8320E. It's just going to be used for overwatch, minecraft and some dolphin emulation.

Pretty wide range of cards there.
A GTX 970 would be a beast, it murders the 1050ti which is a low end economy card.
A GTX 580 was strong in its day, and just about keeps up with a 1050ti, maybe 20% slower (which is a lot but given the age it held up well)

If you have the 580 it is probably fine for your purposes, for now.

Greens has covered it off. The 580 should still be fine for Overwatch, Minecraft etc.

A 1050ti would give you a bit of a boost, but probably not enough to justify the ~$130 investment.

If you can find a 970 for cheap, then sure - but they're holding their value pretty well in the used market, so you're unlikely to find one cheap enough to justify it.
