I want to spring for a 1000w power supply just for the heck of it in case I want to ever use two GPU's. Is it possible to over load my pc and short something out if I put it in without my pc using that much though? Sorry if thats a silly question.

No, but 100w is not overkill lol. If you mean 1000w then you wouldnt need that even for two 1080's, but the answer is no, it will just be too much for what you need. I'd focus on quality over power.
I would not buy a random 100W supply. I would get something better then that if it is for GPU usage. As for having to much Wattage...no it won't fry anything but it won't be very effiencent either (ie running up your power bill). What make and model PSU do you have now?

Most power supplies are most efficient at about 50% load. If you get too much (or too little) power supply, you'll be spending most of your time far from the 50% mark, and wasting more electricity. The difference is not that large though (probably a few dollars to about $10 a year).
