As the title says. Do I need a 1080 for this kind of setup, or can I get by with a 1070 for the next few years or so?
Currently running:

Solution
For dual monitors at 1440p id go with a 1080. I have a Predator x34 1440p monitor and I average about 70-90 fps with my 1080. 2 standard monitors will have more pixels that I do and I would want to make sure I stay over 60fps for a few years.

Oh, and if the 1080ti comes out next week you may see some good price drops on the 1080.

Assuming you have no intentions of gaming on 2 monitors, and just 1, with the 2nd monitor being for more desktop space, there is virtually zero impact on performance adding a 2nd monitor. If you plan to game across 2 monitors, don't plan to keep doing that, as you'll find out having the bezels down the middle of your view is not worth the extra side to side view. The GTX 1080 will allow for higher FPS or settings, but the GTX 1070 can manage too. The question is up to what fits your budget.
