I own an ASUS Rampage III Extreme and core i7 975 extreme. I haven't used them yet, they have been sitting in storage for a while.

I'm in the process of building a gaming PC, and I was wondering if it is worth keeping them, or upgrading to an x99 system (most likely 6800k/5820k.) it would save me a huge amount of money if I kept the 975, so it is worth it to upgrade?

There's no reason to upgrade for gaming. You can see in the link below that there's hardly a better performing gaming processor: http://www.tomshardware.com/reviews/cpu-hierarchy,4312.html

There are other reasons to consider upgrading, especially power usage, but you should probably just focus on spending money on a graphics card. What graphics do you have in mind?

As far as RAM, I used to have a socket 1366 CPU with the triple-channel memory. It's not really noticeably better than dual channel. I'd suggest you find 8GB of DDR3 laying around somewhere and use that until you're ready to upgrade the whole system in a couple years.
