This is my planned PC build, including peripherals:

So firstly, I'm planning to replace the stock fans and have 1 AF140 at the rear of the case and 2 at the front and there will also be the 2 fans that are with the H100i. Would it be better to get more or fans or is the current amount that I've chose unnecessary and overkill. Would I need a fan controller or anything like that? Also, I would greatly appreciate any suggestions of better components at a similar price range. Thank you.

The Swiftech Helix PWM fans double as a case airflow fan as well as a radiator fan, so you can't go wrong with them. Swiftech also have 140mm PWM version so you can look into those as well. If you want silence, you can pick these Noctua P-14s Redux fans for the rear exhaust and front intakes otherwise stick with all Swiftech fans.

If you want to have your H100i v2 off the same header then you can look into Swiftech's PWM fan hub. I suggested the latter fan hub since you can have the H100i v2's pump header operate off the CPU_OPT fan header while the PWM fan hub operates off of CPU_FAN header.

Ditch the Corsair fans since they have terrible build quality and tend to fail very soon after going into service. No, you're not going to need a fan controller if you go for all PWM fans for the chassis and pick up a PWM fan hub like this.

Since you're on an AIO, you can pick these Swiftech Helix 120 PWM up but I'm a little confused on how you're going to have the AIO setup in the case. Do you want a Push/pull setup or a top mounted AIO?
