Need Help with Server question

I've been looking to get a home server for a while now, not only for storage but to run game servers off of as well, nothing too crazy, maybe Minecraft and 7 Days to Die. But I keep running in to certain pre-built systems that seem way better than anything I've put together for half the price. I've done a lot of enthusiast building for gaming PCs, but when it comes to server terminology and hardware I have no idea what's best or what certain pieces of hardware are better and worse.

I've been looking to build a Xeon E3-1225 V5 build. But I see certain systems like:

that seem to be far and away a better choice, but like I said I'm a novice when it comes to servers and server hardware. What makes this piece so cheap and why wouldn't I choose it over building my own $500+ system from the aforementioned Intel processor and a Supermicro mobo.

Please and thank you, I'm trying to learn more about servers and what's better for certain tasks, so an explanation why certain things are better instead of a clear cut "choose this, not this" would be helpful.

I wouldn't. Yes, it is inexpensive.
It is also 6 years old.

If you are considering that HP Proliant, also consider that you will need an extra room for it.
Those things are LOUD.

Why loud? Because they are small, vertically. More heat generated inside, AND small fans to remove that heat.
Small fans to remove that same heat = higher RPM = LOUD.

Just build a regular PC, in a regular case.
And for a 'home server', you don't need an uber system with a Xeon.
Too many people get caught up in the word 'server', and think one of those powerful things that live in a corporate server rack.

Not needed, at all. Any regular PC built this decade will do what you are looking to do.

For the first one...$300 for a system you can't use because it is too loud, is $300 wasted.

For the second...Why shouldn't you? It's a 7 year old CPU.
