Non-Gaming Build Advice

I've built several computer's before, however they are always game orientated. I have never built a "normal" PC and as such I keep leaning towards the high tier parts that I usually select even though they won't be needed in this build.

For my current build, the main focus will be on programming with multiple monitors as well as some CAD and standard university applications.

I can certainly select my own parts, but I will most likely end up with a build that is much more than I actually need.

Would appreciate some ideas/builds that fulfill the aforementioned criteria under $1000 up to a max of $2000.

Monitors need to be included however a mouse, keyboard, and OS are not necessary.

Quadro cards are massively expensive without much of a difference other than warranty. They used to excel in single-fixed pipeline using legacy calls and double precision float computations for science, but todays geforce cards have double precision rendering methods eliminating that advantage as well as excelling in core clocks.
Also he can add more hdd space if he wants, thats always open to him.
