There no con of having 32Gb ram over 16gb ram. The reason why people always recommend 16gb ram as max is because it probably not going to be needed. 32gb ram is kinda overkill basically. Get 32Gb ram if you can easily afford it. However you wont find 16Gb less. Make sure you dont compromise on the remaining components just to afford the extra 16gb ram.
because most games don't even use up 16 gb of ram your just spending money for something that is not fully used. Not saying in the future it wouldn't be worth it but as of today its just rare to use that much ram for gaming.

The con would be spending lots of money for 0 benefit, unless you do work that's very RAM intensive (rendering 4K video files, or working with huge amount of .raw files in Photoshop, for example).
