What is the deal with using overclocked GTX cards with Premiere Pro and video editing software

Is it wise ? or does it not matter

I heard that video editing with an overclocked graphics card could damage the card long term , more so rather than gaming

This could be misinformation ,

Video editing and rendering mostly use the cpu. There are a few things that will use the gpu for a short time. If you overclock, no need to worry. I have overclocked 980tis in SLI theres not much performance gain in video editing since all of my editing uses CPU since I have no CUDA accelerated effects
