Need help - trying to understand CPU usage in my system

I recently upgraded my cpu from an i5-4690k to an i7-6700. I received it as a gift. Let me just say that games like BF1 & Dishonored 2 runs great at 60 fps, 1080p, and max settings with this cpu paired up with the 980Ti gpu.

Here's what I don't understand. Many gamers I've come across run most games well above the 60 fps baseline when I ask them. They run the games averaging around 100+ fps. I can run the games at higher fps, but when I do, the cpu usage hits 99% + (goes red in task manager), producing some lag or stutter in game. So I wonder, how can they, who might have similar specs, some lower than mine, be able to run games so smoothly at much higher fps, while I struggle to run them consistently due to cpu usage? Is there something I am doing or not doing? Are they lying (doubt this)? I ran benchmarks with Heaven or in-game ones like Batman Arkham origins, and I get insane averages near 110 + fps. I have no issues with temps (less than 55 c) and all components at this time are running stock!

I hope someone can help explain what I am not doing right, provide a link to helpful info, or help educate me on how to maximize my performance in my system. Ideally, I'd love to be able to get some super silky smooth gameplay going with high fps and not worry much about cpu usage. Any advice, tips, etc would be helpful. Specs are below:
