CPU: 6800k, or the new 7700k?

I'm building a new system in about a month, and am currently finding the right parts for the build. I'm stuck because I can not for the life of me choose the right CPU. I've been reading everything I can find but still can't figure out which CPU to go for, so that I can finish my build and start ordering.

So let's get down to what the system will be used for:

Gaming on the maximum settings, at 1080p. I do not yet feel the need to go any higher on resolution, but if I do decide to, I want to be ready for it.

Streaming to Twitch... etc. I'm hoping to achieve the 1080P 60FPS mark with some games, I know it's a lot to ask for, especially for someone who isn't partnered, but I have the need. I could work with 720p 60FPS, as long as the quality is nice, crisp, and smooth. We can't forget about the chrome tabs that will be open, and any other misc programs that may/will be running at the same time that I am gaming and streaming.

Rendering videos to put on YouTube. Shouldn't be a problem with either CPU but figured I would add that in.

Here is the build I am going for:
i7 6800k OC to 4.5Ghz (as long as I don't totally fail on the lottery) / i7 7700K OC to 5.0Ghz (Again, lottery)

Asus ROG strix x99 mobo / Asus Maximus IX CODE

G.Skill Ripjaws V Series 32GB (4 x 8GB) DDR4-3000 Memory

Samsung 960 Evo 1TB M.2-2280 Solid State Drive

EVGA GeForce GTX 1080 8GB FTW Gaming ACX 3.0 Video Card

Thanks is advance for the help, and hopefully we can get this solved.

So since you want to stream and play on same PC 6800k is a clear winner here.
You can also use stream option withing GeForece Experience that will lower CPU usage but i dont know what quality it will offer.
For quality 1080p 60 FPS you will need a good upload speed also.
I see you will get 1TB m.2 driver and that cost a lot, i think it would be better for start go get a 256 or 240 GB SSD SATA 6 and 1 TB HDD and rest money invest in better CPU.With saved money you could get used i7 5960x what will handle gaming and streaming at a same time pretty good.

I second what st3v30 said. To add to it, with a GTX 1080, you should have no problem doing this in 1440p. Which will look even better. I'd say cut down and don't go for the unnecessarily expensive motherboard and go for an X99 Asus strix Mobo, go for 16GB of RAM, go for the 256GB/512GB 960 EVO SSD and a HDD or SSHD put the extra money towards a 1440p GSync monitor. You won't regret it.
